I’m making a sample Green Chile Stew for Ken and Jess’ wedding. I will post the actual recipe later, but my “secret” is to smoke the whole chickens before I do anything else. I’m using apricot wood, but any hardwood will do. Fruit is best.

I’ll be serving it in pumpkins. I think it will be very nice that way. Gonner showed me a stew he makes with green chile etc. that he finishes in a pumpkin. Good stuff.
I prefer to use 2 parts beef stock and 1 part chicken. And leave out the seeds, so my white doesn’t show
Nice tip. I am going 100% chicken this time. I’ll give that a shot another time.
I like using black beans in my stew instead of pinto beans, I also use fire roasted diced tomatoes instead of just regular ones, gives it a nice flavor.
I don’t use beans or tomatoes in mine. Just not a fan of either in a real green chile stew. Tomatoes are traditional… but no beans for me!
I don’t use meat most of the time in mine so beans are the protein, I was a vegetarian for a long time, pretty much until I got pregnant and my doctor told me I needed meat protein.
Ah. That makes total sense! Add some rice on the side and you have a complete protein!
I’m thinking I might actually throw some tomatoes in the stew…
