When cooking with my flavored salts, reduce the amount of regular salt used while preparing dishes by at least half. My salt-blends still contain sodium, but have only 40 to 60 percent as much as regular coarse kosher salt by volume. The salt-blends are not nearly as useful while cooking, as the flavorings can dissipate. Salt-blends are for finishing a dish just before serving or for rimming a glass for cocktails. Most are great for sprinkling in a beer or on a garnish. Try dipping a slice of lime or lemon in one of my salts to go with Tequila or Mescal.
